The 2009 Country Fayre, held on Sunday 19th July in the splendid Grounds and Hall of Great Shefford School, saw a good turn-out despite showery and blustery weather. The horticultural show had a good range of entries and the lemon drizzle cake competition proved a great success with thirteen entries (see recipe below). Photography and the children's classes also had a good response.  A new feature this year was an exhibition of local artists work - this proved to be very popular indeed. There was also a selection of classic cars and motorbikes on display.  LEMON DRIZZLE CAKE Cake 4oz Soft Butter 6oz Caster Sugar 6oz Self Raising Flour 4tbsp Milk 2 large eggs Grated zest of 1 lemon Pinch of salt Syrup 4tbsp fresh lemon juice 3oz icing sugar 1. Butter 2lb loaf tin & line with greaseproof paper & butter again 2. Preheat oven to 180 degrees C 3. Place all ingredients in a bowl or mixer & beat for 3 minutes until well blended 4. Pour into cake tin, smooth top & bake for 35-45 minutes 5. Remove & cool in the tin on a cooling rack 6. Gently warm lemon juice & icing sugar until the sugar dissolves 7. Prick the cake with a fork & pour on warmed lemon juice 8. Leave cake until cold before turning out 9. Serve sprinkled with icing sugar
